This Pumpkin Cinnamon Swirl Sourdough combines the rich flavor of pumpkin puree, the tang of natural sourdough, and a sweet cinnamon-spiced swirl that turns every slice into the perfect fall treat. Ingredients

For the Dough

  • 100g active sourdough starter

  • 200g pumpkin puree

  • 25g maple syrup

  • 240g filtered water

  • 500g bread flour

  • 12g salt

For the Cinnamon Swirl

  • 4g ground cinnamon

  • 5g pumpkin pie spice

  • 87g sugar


Instructions

  1. Mix the dough: In a large bowl, combine your sourdough starter, pumpkin puree, maple syrup, and water. Add in the flour and salt, mixing until a shaggy dough forms.

  2. Rest and stretch: Cover the bowl and let the dough rest for 1 hour. Perform stretch-and-folds every 30 minutes for strength.

  3. Bulk fermentation: Allow the dough to rise until it’s doubled in size and feels airy.

  4. Incorporate the swirl: Mix together the cinnamon, pumpkin pie spice, and sugar. During shaping, layer this cinnamon mixture into the dough, gently folding and rolling so the swirl gets incorporated throughout.

  5. Final rise: Place the dough seam-side up in a floured banneton or lined bowl. Let it proof until puffy and airy.

  6. Bake: Preheat your oven and Dutch oven to 450°F. Place the dough inside, score the top, and bake with the lid on for 30 minutes. Remove the lid and bake for an additional 15 minutes until golden brown.

  7. Cool and enjoy: Allow the loaf to cool on a wire rack for at least 1 hour before slicing. This ensures the crumb sets and keeps the swirl intact.
